Wine Making
All
grapes were hand picked. Cold soaking took place for a short period.
The
Cabernet Sauvignon was fermented in separate an open top fermenter. The Cabernet
Franc and Petit Verdot were fermented together in an open top fermenter.
The
wine was matured in 2nd and 3rd fill French and American oak barrels for 14
months.
Winemaker’s Remarks
A
full bodied, well structured wine. Hints of fynbos and complex berry flavours.
There is a good balance between tannins, smoothness and drinkability.
