Wine Making
The
grapes were hand picked early morning. These grapes were picked on different
days to add complexity to the wine.The
juice received skin contact for about 4-8 hours.
Fermentation
took place at 14’C. The different blocks were fermented separately
Only
free run juice was used.The wine was then kept on its lles for about 5 months.
Winemaker’s Remarks
Typical Elim Sauvignon Blanc charactiristics. Flavours of cut pairs and
litchi with a mineral core and well balanced natural acidity.
